Monthly Soup Recipe Features
Each month we will profile Chefs and Soup Sisters from our upcoming Soup Sisters Cookbook
Curried Squash and Coconut Soup
Submitted by Rogelio Herrera
Rogelio was born in Colombia, has cooked internationally in France, Spain and Israel and even cooked for Brad & Angelina! In Calgary he has worked at Teatro, Wild Wood, Vintage and is now chef and co-owner at Alloy. Rogelio’s food is simple but packs a lot of flavor you can taste: Latin, Mediterranean and Asian in almost every one of his creations.
His Curried Squash and Coconut Soup with Minted Yoghurt is fantastic and a Soup Sisters favourite, as is Rogelio himself.
Okanagan Apple, Sage & Celeriac Soup
Submitted by Jennifer Schell
Jennifer is a Soup Sister and Food Writer living in Kelowna. Volunteering for Soup Sisters has been an absolute gift and she enjoys every moment. Each session continues to move her and fill her with joy and reminds her of the power of community. "It is thrilling and rewarding to see the effect the soup making session has on each new group - they all leave aglow."
Her favorite part of the evening is making a toast during mealtime. "Raising our glasses to the group, the chef and then send love and strength to the women and children at the shelter."
"Never has a charity resonated with so many and embodies such a completely staisfying, spirit filling experience. "This is an organization that was clearly born from an amazing, loving and nurturing heart. Thank you Sharon!"
Curried Sweet Potato, Carrot and Red Lentil with Ginger
Submitted by Julie Van Rosendaal
Julie is a food writer, author, stylist and journalist. Her food styling and photography will adorn the pages of the Soup Sisters Cookbook! She is the food and nutrition columnist on the Calgary Eyeopener on CBC Radio One, co-host of TV’s It’s Just Food and writes and is the photographer for her popular blog, Dinner With Julie. which documents real life in her home kitchen in Ramsay.
She is the poster girl for low fat cooking having a knack for taking recipes, typically high in fat, and creating a healthier version.
Her Curried Sweet Potato, Carrot & Red Lentil Soup with Ginger (a Soup Sisters favourite) is mellow and comforting. It is low in fat yet loaded with fiber, vitamins and minerals, particularly high in beta-carotene with the red lentils contributing protein.
